I just write things on guitar put them on tuxguitar (Or guitar pro if i have access to it) export as MIDI and put it on fruityloops then change it around a bit. I think that the secret is to listen to a lot of classical music as well as Film soundtracks from composers like Danny Elfman. You also should buy a midi controller, a cool orquestal vst synth and try to record anything that comes to mind. I recomend you to start composing short orquestal ideas or adding orquestal arrangements to any metal song (of you own or of any band that doen't use orquestrations).
