Yes, I use my index finger as a bar to mute the third string (and the first string), and the palm of your right hand to mute the lower strings.
One last thing, to get this "dirty" sound sometimes you seem to strike almost all the strings (especially at 2mn:20s) and mute them except 2nd and 3rd. I don't get if you use your right hand palm or left hand to do that ?

Thanks everyone. I saw ZZTop a few months ago for the first time and they rocked. I think this should help some begginer-intermediate players that want to get to the next level. At least that's my hope! :-)
